Could I put (2) 4 cell 5000 mA 60C lipos in series to power this motor? The setup for the Power 110 motor requires 8 cell lipos.

Yes you can. I used (2) 2650 3s to power my Power 60. Flew that way for a couple years. Then Hobbypartz had a 6s 5500 on sale.

Yep, you sure can. I like to use two packs to get 6, 7, 8, 9 and 10 cell setups, as that makes the same 3, 4 and 5 cell packs available for use in other models.

That is exactly what I do in my 1/4 scale Interstate L-6 Cadet. Power 110 , two Zippy 4S 5000's in series to make 8S. Flies the plane very nicely. I usually series up packs in the 6S and above since I find it easier on me if a cell goes bad. Far eaiser to deal with a bad cell in a 3S or 4S pack than a 6S or larger.

Picture of the L-6 attached, weighs 17 #'s and flies like a dream. It originally flew on a Saito 120 FS and I converted it to E power last year and flew it at the NEAT Fair. Was on the cover of the Jan 2012 issue of FLying Models which surprised the daylights out of me.
