How important is dihedral.

Uh say I knew a guy who had a flat wing(dihedral). Would it affect flight?

Huh? You can't have both, you either have a flat wing or you have dihedral. Yes, it affects flight. Typically you see flat wings on aerobatic planes, usually with ailerons; and dihedral (or polyhedral) on rudder/elevator ships.

Yeah, if you have a more or less straight Leading Edge wing and a rudder, you will need dehiedral to help bank the plane durring rudder turns and to return it to level flight when you let off the rudder. Even on an aliron ship, with out dehiedral the plane will tend to stay in the roll attiude you leave it in and not return to level flight.
There are exceptions though, if you have a heavy sweep angle in your wing leading edge, like a Delta wing, Zagi, Twinjet, ect, the rear sweep works as dehidral, so dose forward sweep in the wings, like the X-bow.

Dihedral buys you two things: roll stability and the ability to turn with a rudder. Once in a bank, a wing without dihedral will stay in a bank but a dihedral wing will self right. The rudder on a flat wing will make the plane yaw but will not lift the wing. With dihedral, the angle of attack on the outside wing will be greater, creating more lift and causing the plane to bank.

On an aerobatic plane, both these things are bad.

Don't forget the best thing about using the sweep effect for dihedral: It works just as good when you're upside down!

and dont forget anhedral! not only does it make a plane more aerobatic, it provides inverted stability.

Dihedral requirements will vary depending on the position of the wing. For the same stability, you will need less dihedral for a high wing than you would for a low wing. This is due to the pendulum effect the weight of the fuselage has under a high wing.
