Be sure to browse the classified ads on here and on HF. You can get a good deal on a used radio most often. I bought my DX9 used.

The auto leveling in the Brain/Ikon FBL's is really meant to be used in combination with the rescue feature.

The AR7210BX can do stability modes but it will cost you $99 in addition to buying the unit. The used Spirit's on HF are listed at $120 and you could probably get a bit off that negotiating.
Where do I find the Spirit FBL flight system?

Is there a certain one that I need to have the self-leveling and stabilization?

Get a Geolink for the Spirit and you will have the mother of all FBL learning assists; return to home, hard deck, geofence, altitude hold, position hold, e.t.c.

Yes, I use 10 channels with mine but you can get away with slightly less but slightly less won't be ideal though.

Yes, if using Geolink then more channels the better. You could still get away with 8 but you would be more limited on how many functions you could use

Are you using a PC or a smartphone browser? For a PC browser there is a currency drop down list second on the top left.
