Top Flite 81" Cessna 182 Electric Conversion

I am looking to build a Top Flite Cessna 182 Skylane kit. This plane was later distributed as an ARF kit by Top Flite which allowed for either glow or electric power setup. I would like to use electric for power. I am still learning the ins-and-outs of using electric power ( and Motocalc ) and have a few questions.

These are the specs on the plane and the recommended Rimfire motor and LiPO batteries for the ARF version:

Wingspan: 81 in [2060mm]
Wing Area: 898 sq in [57.9 dm2]
Weight: 11.5 12.5 lb [5220 5670g]
Wing Loading: 30 32 oz/ft2 [92 98g/dm2]
Length: 64 in [1630mm]

Great Planes RimFire 1.20 (50-65-450)
Out-runner Brushless
60A Brushless ESC
LiPo 11.1V 3200mAh 20C
LiPo 7.4V 3200mAh 20C
APC Prop 16x8 thin electric

Is it necessary to use the two lipo batteries in series, or would there be a single lipo battery that could be used instead to simplify battery changes and charging ? For example, could a 6S battery be used with a specific rating, voltage, etc. ?

Is there a better quality motor than the Rimfire 120 you might suggest looking at ? I'm not knocking the Rimfire, just wondering what a next step up would possibly be.

Are there motor, ESC and battery setups that are proven to work with Top Flite giant scale kits such as this ?

I also have a Top Flite Bonanza, T34 Mentor and giant scale P51 I intend to build as electric as well. I think the same power setup on the Cessna would work on these kits. So solving these issues for one plane may solve it for all.

Thanks in advance for any suggestions, especially if you've flown one of these planes successfully under electric power.
