Motors getting hot and quad taking off violently


Hey guys,
Iīm relatively new to fpv, but last winter I built my first 5 inch quad.
Everything went well, more or less, but then I fried my flight controller.
After that I rebuilt the quad with the matek F722- SE.
My setup:
Racerstar BR2207S Fire Edition 2500 KV
Spedix IS30 30A DSHOT 600 Ready
Radio: Flysky FS-i6
Receiver: Flysky FS iA6B
Rest doesnīt matter, flies on 4s.

I left everything how it was, and connected it up to the F7.
I even updated the firmware, and softmounted it.
Receiver is working fine in Betaflight, in the Receiver tab everything is correct.
If I start the motors via betaflight, they spin the right way, and donīt get too hot.
However if I arm the quad in the field, it is jumping up at me.
Then I lowered the min throttle, but that didnīt help so much.
Next problem is, that when I push the throttle, it overreacts.
The motors are also not spinning smooth, when it is armed, they always stutter a little.
Another thing that is strange is, that the ESCs are not running on DSHOT600 (like on the product page), but on ONESHOT125 in betaflight.
I also updated them via BlheliSuite, but Iīm not sure of that XD.
But this didnīt seem to have any effect on the last fc. (which was a darlfc f405)
My guess is that it has something to do with the giro, but I have no idea.
I also changed some of the filters or the D-Term, but didnīt have any success.
Maybe I just did something wrong.

Does anybody have experience with something like that? I would be happy for any advice
I also added some screenshots of Betaflight ... maybe this helps.

Change the esc protocol to dshot600 and then try it. When you flashed the FC you reset everything to default and it must be set back up to work properly. If you flashed to 4.0 you must set everything up manually, Do NOT use a backup or cut and paste settings from the old firmware install to set things up

Thank you very much,
I solved the problem.
It was the ESCs which I resetted to default in BlHeliSuite.
That way I could switch back to Dshot600 again.
