taking the top wing off the tm

If you take off the top wing for tm will it still fly??

I saw one just doing donuts on the floor of our indoor venue when the top wing was removed.

Yup, that's exactly what I saw. They don't make a very impressive r/c car!

Just taking the top wing off gives you a very nose-heavy low winger with almost twice the wing loading. I doubt that the stock TM power train gives enough thrust/speed to sustain flight as a mono, even if you re-balanced it. And it would quite possibly need more dihedral to make it turn.
