I can see a big advantage for balancing the vertical area on a DLG. But on the other designs it really isn't a big deal at all. And as noted by a few it opens up the risk of fin damage. YMMV but to my mind the risk of fin damage is more worthy of attention than any insignificant reduction in adverse roll.
V tails are very popular these days. And there would be far more adverse roll from that configuration than we would ever see from a fin and rudder. Twice the surface are moving around and longer moments for each compared to a single rudder. Yet everyone and their brother is on board with V tails and no one brings up any issues with adverse roll for that configuration.

I wonder if this has anything to do with why a hand launch that flies without rudder control will use reverse differential, more down than up on the ailerons, to make a turn.
