that little center pod looks neat, I wonder how much room there is in there for batteries and FPV gear.

Not much room. I flew mine with a 2s 950mah. the front part of the nose is slotted for the lipo

Theres room for your rx and esc towards the back.

Starting to plan the build now - what motor are you going to use? I'm looking for a spirited flyer but not a rocket

The specs are for an 1806 KV2600-KV3300, which is pretty hot so a typical 2300kv with 5x4 would probably work fine then on up to the 2700kv with a 5x3. One of my Rainbow 800's uses a RacerStar 1806 2280 with 5x4 I think it is, and it's plenty fast so anything from there up should work great. I have a Cobra 1806 2800kv hanging around that will probably go on my build.

I'm hoping to outfit this with a 2205 2300kv (5") or 1306 3200kv (4") motor, 3S 1000mah, TX02 micro FPV cam, 3mil laminate and maybe some LEDs.

I'm going to wait until it gets here to decide for sure, but it'd be nice to use a 2822 2600kv on 4s with a 4.75x4.75 prop
