E-SUNBIRD SETUP AND MKS DS6100 servo voltage

I purchased an e sunbird carbon version and would like to use the
following setup:
motor: hacker b40 8s 1:4.4 geared with 10x6 prop on 3s setup
I hope 3s is not too high for this motor!, more then 500w
at full throttle
ESC: Hacker X55 sb pro: 5.5v bec 55amp continous and up to 65
amps for 15 seconds
battery: gens ace 2200 3s 55c battery

servo: MKS DS 6100 5v servo

what are your recommendations and thughts about my setup?
the plane will not exceed 1.4kg and I hope for 1.3kg total weight.
I can replace the ESC to 70ampif needed buy I do not intend to draw more then 50-52 amps max.
The servo is supposed to work at a maximum of 5v, does anybody
have experience with this servo at a little bit higher voltage?
not more then 5.5v as the voltage will drop until it reaches the servo because at least 0.5m extension will reduce voltage a bit?
Any recommendation about my setup will be highly appreciated

I have read test at 6v. with no problems.

Also long time use at 5.5v has been reported with no issues.
