Willi,
I have seen a photo of the Wright brothers kiting their glider and measuring the lift and drag using the angle of the tether lines and a scale to measure the line tension.
The rest is trigonometry.
Another way would be to use a rubber or winch hi-start and release when the line reaches a set angle. That way the bird would be at or near gliding speed and aoa. It would not need to drop to attain flying speed.
