Just a Great Guy!
I use plywood exclusively so that it will break out. I believe this saves the engine from damage and doesn't damage the fuselage. I can cut out a new firewall from plywood in about two minutes. Matter of fact, I keep a couple of spares on hand just in case.

Nosewheel

Get a motor mount with the nose gear mounting blocks made into it. That's what I did. Works great.

Spads

As we speak I have got a 120 Stinger, A 120 size Extra 300XS, A Weevil(spad), A Debonair(Spad), A Demon(Spad) 90% done, need receiver, and a Pizazz, all in the garage waiting for the weather to break so I can fly some of them. All are ready to go except the Demon and it's trying its' best to get into the van so it can go also.
We are socked in with rain right now and for the next few days so I guess I'll just charge batteries and clean up til it breaks.

Spadplanter,
Any local hobby shop that sells RC gear will have a .40 size motor mount with the built in nose gear blocks and prebent nose gear for it. Or go online, Towerhobbies.com has everything RC that you could want.

I know that I can buy the mount. Has anyone done it with cutting board?

I built a motor mount out of cuttingboard with a nose wheel mount. What I did is laid it flat and cut a U shape for the motor and behind the motor, drilled and attatched the nose gear. It worked out fine!

Was a single thickness OK? Or did you double it up somehow?

It's just a single thickness...about 1/2 inch walmart cutting board.
