What is the correct elevator angle or setup

I built a FMS Cessna 400 and wanted to know what the correct angle is for the elevator and other controls. I have centered the servos and have made sure the controls are at zero position. However, the elevator does not seem to have adequate throw. Please help! Thanks.

All control surfaces should be level.
Usually the amount of throw is adjusted by moving the control rod into different holes on the servo arm and the control surface horn.

I did the maiden flight and it was plenty controllable. I was amazed at how little it took? The air foil over the tail wings is super sensitive.....

Ya 10 to 20 Degrees is good for most trainer and sport... 3d is closer to 45 to 60 degrees

the "tail wings" are called the stabiliser (or stabilizer to usa)

the "airfoil" is actually the cross section of a wing or other surface, and as such can't be sensitive

but i get what you mean
