From what I have heard, its when the servo is drawing way more current than it should be. Idk what causes it though.

A stall is when the servo no longer has enough power to move the surface. Either the air resistance, or binding, or whatever causes the resistance to be more than the output power of the servo. Which generally causes the servo to draw lots of excess current trying to force it to move farther.
