First Quad-X build: Need some advice

I am building my first and I need some feedback on my current parts list. I also have some questions about flight controllers, power distribution, and some other technical specifics.

I have been reading these forums extensively for the last couple weeks and have decided that I want to build a Quad that's probably around 500mm motor to motor. Hopefully one that is stable enough that I will be able to eventually do AVP once I get good at flying it. I am not really interested in doing aerobatics at the moment. I want to build as much of this as I can because I want to have an appreciation of how it all works and also because I am trying to keep to a relatively tight budget.

So here's the list:

I saw these paired with the above motors a lot. Is 25A excessive? Will 18A ESCs run hot? What advantage do these have over the cheaper HobbyKing ESCs? What sort of programming am I going to do with these?

ESC Programmer
I am not going to dick around with listening to beeps if I am gong to get a programmable ESC.

I am really not sure about this one. I know that 10" props give more lift and that 8" ones are more responsive. What's best for what I'm looking for? Are the 3-blade props a good compromise or is there a reason I shouldn't use them? Also what about pitch? 10x6 vs 10x4.7 vs 10x4.5?

Is this going to work well out of the box? What are the advantages of buying the $45 programmer/backlight?

Battery and Charger
Not sure yet

DIY using 1/2" 6061 Aluminum tubing

Power Distribution
Can't I just wire up the ESCs to the battery in parallel? If I can't then why not? What does a prebuilt power distribution board really do?

Flight Controller
I am thinking of using MultiWii and was planning to just buy an Arduino Pro Mini, WMP, and NK and wire them up. Then I saw all this talk of shields and mounting boards? What do these do and why should I buy one? I don't want to have to spend $150 on the brain of the Quad. Will the setup I desribed work or do I need to buy a shield? Why are they called shields, they certainly don't look like they shield anything from EM.
I recently discovered CopterControl, its a little pricier than my planned route but if it really is worlds better than I might get it. What are the advantages of OpenPilot over MultiWii?

the Eagle N6 controller is very easy and newbie friendly. (it's my first X quad as well) Dip switches so you dont have to play around with programming or flashing chips. it is just 3 gyros it doesn't have any autopilot or GPS.

I am not really interested in a kk board and I don't mind flashing chips.

I am only interested in MultiWii (which I would probably assemble myself) or possibly CopterControl.
