1. yes, disconnect the red wire from one esc servo lead.
2. yes.
3. some do. mount the escs where they will be cooled by airflow. on a highly-loaded esc i would put it somewhere in the jet inflow our efflux. for cooler-running escs exterior mounting works fine.

It's a really big number.
On the GWS 262 there is enough foam in the nacelle 'mounts' where they join to the wings to embed the ESC's so the heat sink is in the efflux of the fans. It also makes the wiring easier as the channel in the wing for the wiring is too skinny to carry 3 wires from the fuse to the nacelles easily.

The GWS 262 is a good jet - just beware of piling on the throttle in low airspeed situations when flying - run it up smoothly and let airspeed build. The thrust line is quite low and may cause a nose up at low speed + high thrust situation.
