Fly whatever FC you like.
Chuck another arduino onboard to handle the raft of sensors that are available and send the data back to a ground station for decoding. Go to Sparkfun they have sensors for everything and stuff for collecting and transmitting data.

The rest is in the programming

If you want to try a tri, try the kk2 board with the LCD screen from hobbyking. Very cheap and good. Also has accelerometers built in. Lots of support. I think it's 20$ now!

The large Futaba's would probably work fine, just try it, the weight of the servo is no problem at all.
