Having built and flown a few D80s, I would say that the 3" CG is the correct starting point (and maybe even the correct ending point, as final CG will be *very* close to that mark).

All the Dynamics I've had (80, 60, 40) respond very well to full span camber to climb out. I would put about 5mm total camber on a slider, no need for elevator comp unless you try it and find it absolutely necessary.

For your:
Start/low speed with 2 mm flaps and ailerons down, ailerons +11/-8 mm, elevator +/-7 mm

I personally would not put the ailerons down, just the flaps. Keeping the ailerons neutral will give a washout effect and reduce the risk of a low speed tip stall. But think you will be fine either way.

I use more than 2mm, full span. Dynamics really do respond to camber well when launching.

Thank you for your suggestions and comments. I’ll keep the CG at 3” then and will play a bit with the camber settings for the start.

I did maiden my D80 a couple days ago, in 35-40 km/h winds, front side of the slope. It was great to setup the plane before the first DS flight. At the end there was not much need for setup correction. Right from the start it flew perfectly, no trim or correction needed. Adding 3mm of camber full span helped for the start. In flight there was no need for camber. Rolls were good, not super fast but good.
Landing was great, gently down against the wind.

So far so good, waiting for more wind on a well suited DS ridge.

Here are a couple of picture from the first flight.
