This is a 22 year old design but the mechanism is probably unchanged from today. It does not feel like a real piano. -

And there it is, a switch which senses when the key is up & when the key is down. There is some flex in the switch so the on & off positions are not completely up & down. -

Each key is just a weight, a spring & 2 wires for the switch. No hammer action, no acceleration sensing, no hall effect sensor, no optical sensor, no A/D conversion. -
