Best motor for T-Rex 600 on 6s?
Ultimately, I'd like the same performance I'm getting on my 450 with the Neu 1107h 1.5y on 3s, but I don't think that's possible.
What's the best motor? Is Steve Neu going to come out with one that's a bigger version of the 1107?
I've done plenty of searching and reading, but it seems most people are going 8s-12s for performance, but I'd rather not abandon my 4, 3-month-old packs.

The Neu 1515 2.5d is the best 6s motor I've seen in a Trex. It's also one of the few that will fit easily. Most of the obvious motors are too wide to fit between the frames without cutting them away.
The low voltage is always going to be a barrier to getting really good performance from this size of model. I would think very carefully before spending money trying to tune up a 6s setup.

^ very true. Using a 8s or 10s setup will allow you to use lower Kv motors. Higher voltage is inherently more efficient.
If you try to yank 2000 watts from a 6s pack, you'll hit 100 amp spikes (roughly)
However, if you want the same power (2k watts) from a 10s pack, you'll only pull about 57 amps (roughly).
This lets the motor, battery, and ESC all stay cooler (they are using less amps) and provide a longer life. The cooler these things remain, the less power (watts) are being burned off as wasteful heat. Higher voltage (to achieve a given watt output) means more energy is being turned into motion so you get more power, higher efficiency, and more consistency (lower amp draw so voltage doesn't sag as badly).
If you really must stick with 6s, the Neu motors are probably your best bet.
