Hello.
For your model with a prop diameter of 95 mm you need not more than 1800/2000 rpm. Brusless motors (without sensor) get always problems to start slowly. Your Idee to use the 270KV motor is perfect but I advice you to use a beld drive 2-1. To reduce rpm at the prop shaft. For my model of the Maersk Topper I use also Brushless (420kv) and with a beld reduction of 5/3. (with a prop diameter of 2x 80mm) The only different is the Topper get working controlled pitch propellers, so the motor will only turning forward. I made my first test sail 2 weeks ago and with 2000rpm much, much to much power and speed. The ESC I use is max 55amp, but the motor will take max 10 amp each.
