I'm pretty sure that the majority of experienced EDF jet flyers are going to tell you that it isn't recommended to start with a composite, twin fan jet with retracts. Your wish list adds lot of cost and complexity to a first EDF jet that you have a 50/50 chance of crashing on the maiden flight. But if you're committed to going composite, I have a great deal for you.

I have a new in the box HET twin 70mm F-15 that I'll sell you for a great price. I even have two HET 70mm fans with 2w-20 motors and ESC's to sell with it. $150 plus shipping for the whole setup.

Based on your original statement:
"I am not an experience EDF pilot."

A high wing loading warbird EDF (like the F-86) would not have been my first recommendation.
Something with a much larger wing area (Phase 3 F-16, $29.99 on sale this month) or much lower wing loading (Phase 3 U-2) or something just larger (Multiplex Twister) would have probably come to mind.
