1S ESC, 5V System. I got this right, right?

I'm pretty confident that I got this right, but even the astronauts in the Apollo missions asked for a orbital calculation math check before executing a burn.

This ESC takes the input power for the motor through the control lead. Attached is a picture of the intended usage diagram, with my diagram below it. I'm running a gyro, though, with a minimum of 5V, so I need a 5V step-up regulator.

Are you sure ESC will burn if powered at 5V ?
It's right as above, but I would try everything at 5V...

The ESC uses the input from the control lead to power the motor. I don't want to run the motor through the step-up at 5V

Sure, depends what stepup and what motor...
I have a nano tricopter powered from 1s 750mAh, drawing 1.5Amps in hover. 1s wasn't enough, I must finally to power it at 5V to fly stable. Stepup is rated for 2Amps, and works cold so far.

Hmm. How efficient is the step up? I might run it like that.

Didn't measured efficiency, sorry. Would be a bit difficult at these low Amps...
But a switching unit, if cold, can't be less than 90%, any loss means heat.
