I would not compare the CGs of the DG-600 of one mfg to DG-800 of another mfg. Each make their variations when they scale down. The LE sweep of the outer wing panels between the two full size plane are different, and the size of tail planes are different also. I would stick with what Gerasis suggest for initial flight and adjust accordingly after wards.

just found the manual of the Gerasis DG-800. It says:
CG = center of the joiner
rudder throw = +/- 30 mm
elevator throw = +/- 20 mm
aileron throw = 8 mm down/15 mm up
Also found some remarks I made and they say, that the AUW is 2700 gram.
