If your motor mount provides sufficient clearance for 8" or even 9" props (  ), then it's certainly not a "stock" EZ1. Six inches is the absolute limit for a stock airframe, and 1360kv would indeed be too low for a 6" prop on 3S.
With a 6x4 prop, you'd want a motor in the 2000-3000kv range. 2200kv is very common on 3S. So is 2700kv on 2S.
In case I'm misunderstanding and your motor mount really is 8" or 9", even 1360kv is just about too high. 1000kv would suffice for a say 9x5, and a 8x5 prop would work well at ~1150kv.
