I've been spending time during the summer on the Cape since childhood, even though I moved to California in the 60's. I still go every August, but I only got into RC about two-and-a-half years ago. I brought a plane the summer before last, and had a ball flying it at the beach and in front of my house on the Pleasant Bay marshes in East Orleans. It was only after my trip that I saw an issue of QFI magazine with a big article on slope soaring sites on the Cape. I was pretty amazed that a British mag would have an article about the Cape, and also surprised that there was a whole slope soaring scene that I hadn't been aware of.
Anyhow, this is a round about way of telling you that slope soaring seems to be the major RC flying activity on the Cape. I'm sure someone from the area will chime in on this thread, but I believe that there's an RC club in Cambridge (the Charles River Something-or-others) that has a website with maps of the best soaring sites. (Bascially along the dunes on the outer beach between Wellfleet and P-town.)
As far as a spot to fly your Mirage in Eastham, I'm not sure. There's certainly a lot of room at the beaches on either the bay or ocean side. There's also a fairly large field at the old high school in the middle of Orleans.
