I like the fast servos too-
I use the Hitec HS 7940's on my 71 Slick and 72 Extra 330 and they are the same 0.06 on 7.4V speed (less torque @ 220 oz) and you can really feel the crispness of the speed!

Joey, in the last part of the 74 edge vid, was the model really controlled by your mom
..or was it just a joke like your birthsday vid (the one in the gym)?

Hehe, my guess is that it's a setup. While she's flying you can see the shadow of someone's head - 6:50ish - suspiciously close to where they'd be standing if they were actually flying the plane

If I'm wrong, my Mum's getting her first RC Tx tomorrow, because it's never too late to start practicing hovers with a precision balsa 3D machine, even in her early seventies.

I'm very interested in that flaperon setup Joe had near the end of his section on the 74" edge where he flew past with the tail high and both ailerons down while doing it... looked really cool.

I saw that for the first time on SAL gliders when they dropped the ailerons just before landing, looks quite cool. I tried it on my SAL, as well, if you just drop the ailerons down without mixing the nose will go up and you need to push elevator to keep the nose down, you can mix it and put the whole function on a switch if you like it more convenient.

The 58 has about 30 degrees of flaps mixed in with somewhere around 3-5 degrees of down elevator mixed in

The mix is pretty simple for the flaps. I drop both ailerons as much as possible and then mix in the right amount of down elevator to get it to fly level at about 1/2 throttle.

It's very important to make sure that the servos don't bind when you move the surfaces though. Since the ailerons are already fully deflected down, when you add more aileron it could drive the servo too far. I use the futaba 8fg and it has end point limits so no matter what I do I can never drive the servo too far.

It seems odd to add down elevator when the ailerons are dropped down as well. I would think the ailerons would act like elevators.
So both surfaces end up down as in down towards the ground?

they generate massive amounts of extra lift at the expense of drag... the elevator is to simply counteract the huge increase in lift to get it to fly level again.
