End point adjustments are for setting maximum servo travel limits, so as to avoid mechanical interferance.....ie your horn or linkage running into some part of the plane.
The "dual-rates" are definetly where you want to be to limit just aileron travel. Just because they call it "dual" rates does not mean you have to set up two different things on the switch, btw they could be the same settings in both switch positions.
I often got into trouble forgetting I'm on low rates and then not having the control athority when landing flaps were down. I now avoid that problem by using only the expo on the dual-rates menu, for a "low rate" I crank up the expo to around 40-50%. that softens the controls enough, but if I need the full throw I don't need to hit a switch first. I fly on my "high rate", which has much less or no expo, unless I need finer control for thermaling. The travel limits are the same for both "rates".
