the error in the video for the tumble version is the rudder input... you should have full rudder coming out of it, as that's what's providing all the rotation. if you look at all the nice examples of Joe Smith etc, all the rudder the plane has available. It's what made my 103 pwnyExpress so good at it, I gave her more rudder throw
