CoG is the molded humps on the underside of the wing.

You'll need to give it a good throw for launching. Nothing arm wrenching hard, but a good throw non the less. Throw somwhere between 10 and 11 o'clock at about 3/4 to full throttle. You should be able to feel that the plane wants to pull out of your hand so has enough 'go' in it when thrown.

Well you could go by Himaxx' recommendations, use a flight calculator, do a search on RCGroups for others that have used that motor, or use a watt meter once you set it up with different props to find the one that is appropriate.

The 4.75x4.75 should be ok. Recommended prop for that motor was a 5.5x4.5.

Alright. I will look on himaxx's website and see if its there. I can also use a wattmeter and check it. If i pit too much current through it will it just get really hot or do other damage.

It will get really hot and burn up the windings. Since it will be in the air at the time, you won't know until you see the MAGIC SMOKE! Also the bearings in them aren't the greatest, but will be good for a while, unlike a Mega or Arc. I ran mega 16/15/3s hard on 3S for 7 or more years before the bearings went bad. Applying some oil every now and then to them will help.

Waiting on bigger ESC to be delivered, but I put up my 5s SK3 with a 6x5.5 and it was doing around 130-135mph. Came down nearly cool to the touch, not stressed in the slightest. Pulled about 85amps static with that config.

Heavy bird with a 5s 3000 in there, but the vertical launch method works great for getting it airborne.

With a 7x6 on a 5s 3000 40c, I'm hoping to get around 155-160mph. If I can manage that, then it will be time to reinforce the plane a bit and work on 6s.
