They are difficult to find, but this is a .15-size DVII that you could scale down. It being smaller than a regular size model may be safer to scale down compared to a .40-.61 size.

I was thinking of RC, but some C/L planes can be converted. I went to a Fly in locally, and they had a bunch of WW1 birds, they were all larger scale and I thought an .049 size would be pretty neat.

Well, that's a not a bad idea. I think that you can find exactly what you want if you don't mind scaling plans. In that case, there are millions of WWI plans out there!
