First you need to figure out what the motors and other items need. That will tell you whether to go 6 or 12. Then work out the biggest you can carry in the space available. As said before, avoid wet automotive types - they are inclined to vent acid fumes all over the insides of the boat with bad results for anything metal. SLA or Gel cell battery.
I look at battery information sheets that sellers should show to get the dimensions and make card mock-ups of likely candidates to see what fits, then I can do try-out ballasting with that weight where the battery will go to see if its going to float properly.
