Processing X3 (FC-350) images

I have my X3 set to Sharpness: 0, Contrast:-2, Saturation-2, and capturing JPG & RAW.

As you would expect the JPG images look soft and washed out when viewed in photoshop, yet the RAW (.DNG) images when dragged into photoshop (which then opens them in ACR) are over saturated and over contrast. Why do they not look the same (soft and washed out) as the JPGs?

It's not a fault photoshop because both the RAW and JPG images from my Sony NEX5r look the same - soft and washed out.
