Cloth laminate thickness for closed mold?

I want to make some fins in a mold. It will be a few layers of glass cloth. I want to machine a mold so the edges are finished when the parts comes out. Is there a way to determine how much space to allow for a given layup? If a cloth is listed at .005" thick and I'm using 2 or 3 layers, is there a percentage of that I would want to use for my cavity, essentially the final part thickness?

I am using .3mm for my trailing edge thickness. I should state that this is .3mm PER MOLD so it's really more like .6-.7mm total. Mine are DLG wings.
