Miss Geico 17 Help/ Help in general

Hello Folks. Recently I got the Miss Geico 17" for my birthday. It was equipped with the brushed motor, etc. I haven't been in R/C for a while. I used to be in when the M8 was first out and I had the RC10GT and B3, ouch that was a while back. I noticed now everything is brushless. With all the said, I decided to convert the Miss Geico 17 to brushless. I purchased a Seaking 35a esc. Traxxas VXL 380 size motor a receiver for the RTR controller and 3s 1300 lipos. I noticed out of the gate that the boat would flip instantly when you gave it to much throttle. I added weight to the Port Quarter to counter the torque? Still handles like garbage and adding to much weight compromises the integrity of the vessel. I noticed the VXL is a 4000kv motor. Should go with a 2000ish kv motor? Remember im new to brushless so don't beat me up to much
