Apex you'll have to isolate both the esc and the motor. Eg- old motor+different esc. And.. old esc + different motor. I would take the heat shrink off the 3 motor and esc wirers just to check your conections. Buy removing the motor and moving the wires and you still get an intermittent fault seem worth a look?

Sounds like maybe a cold solder joint on one of the motor bullet connectors...you may see some white powder if you remove the heat shrink...and/or bullet connector will feel a bit loose.

I was bored with all this frikkin' snoe we been "blessed" with, so I broke out the 'ol paintbrush, little Testor's flat black, and voila!

Did a few flights this last weekend and my girl friend attempted to take some video lol. First up is the 800 on 3s Which she had a real hard time following
