if a particular plane uses one edf, and i would like to make it a twin with 2 of that same setup, what would be my benefits, thrust, top speed etc.?

are you talking about two EDF's in line with each other, or side by side in a single intake? if it's inline, you get almost no thrust increase and deffinitely no efflux increase. if the application is side by side, you get the same efflux velocity, but double the thrust.
