What brushless motor, ESC and Lipo size would you all recommend, was thinking of a tornado 3630/1000kv and matching esc coupled with 3s1p 2170 packs is this enough?

Have you measured the nose cone to check the motor will fit? The Tornado motor seems rather big and heavy in comparison to the battery. You might find a Hyperion HP-Z3025 would fit better - they have tapered noses.
You can get higher performance from a geared inrunner if you are willing to pay more. 'Enough' depends very much on how quickly you want to get up there. If you are using the motor in short bursts only you can run it somewhat beyond its normal rating.

My X-Models Hawk weight is 1680g in order to fly.
I mount E-MAX BL2810 with 12x6,5 and LiPo 3s1p 2500mA/h this configuration load 29A.
It climb to 45°, this is sufficent for me, I'm very happy.
Pay attention to measure the longitudinal dihedral my model has +4° !!!
The builder (X-Models Lives near me) say that this model was born wen battery and motors was wery heavy respect actually, this is why the longitudinal dihedral is +4°.
In my case I need to correct by inserting a little balsa thickness of 3 mm under the rear of wing and now model fly very well.
