Stainless fishing leader works great, available in lots of guages. Malin Hardwire is one brand, try your local bait shop.

Stainless steel wire, 0.012 inch diameter will work fine. I use 0.012 inch stainless steel leader wire which I picked up at a local outdoor supply store.
http://www.rcgroups.com/forums/showp...8&postcount=22 probably answers every question a person could have about cutting foam with a hot wire. If you spend 10 minutes or so reading that post, you'll understand the tradeoffs with going thicker/thinner.
Foam choice, wire choice, bow length, bow tension, length of cut, and power supply voltage/current all combine to effect the quality of your cuts. If you change any one of those variables, you'll have to adjust something else to get the results you want. The good news is that there is a huge range of perfectly acceptable options for each variable.
