Traditional model sailcloth was a now-extinct material called "Union Silk," which was a blend of silk and cotton. The closest you can get today is "Long staple down cambric" of 300 threads per inch or higher. It is used by quilters for down pillows and comforters, and is woven very tight to keep the feathers from sticking through. A local quilting club should be able to point you to a source, and might even have somebody willing to sew your sails for you.
