Current limits for ESCs question.
Speed control limits are always given in amperes. Does anyone know if these limits are the same regardless of voltage. In other words is it actually wattage that is more important so that an ESC can except higher current from a 2 cell lipo at 7.4 volts versus a 3 cell at 11.1 volts?

They usually also quote a voltage, or battery, range. I think the answer to your question is the both volts and amps are killers -- possibly they kill different components of the ESCs.
But, so long as you stick to the quoted voltage range, amps is all you have to worry about. Too many amps will kill your ESC irrespective of how few cells you've got in your battery pack.

No it's not wattage that is important, as abenn says.
The current limit is about how much the output devices heat up and that is not really affected by the voltage they're switching.
The voltage limit is more to do with how much it takes to destroy the output devices by what is sometimes called "punch through". It's a completely different mechanism from overheating, more like the flashover you get from high voltage power lines.
