If the adapters are made from plastic, and they are the shapes of what you said, then they are the servo horns.
They all should fit on the short stubby shaft that comes up from the servo and should be secured with a small screw.
The ones that have just two arms sticking on each side and the arms are 180 degrees apart. Those are the ones mostly used.
The ones with more than one arm are used for applications where you need to have two control rods attached slight off from 180 degrees.
The round ones are seldom used and are good for special applications that require some precise out of the ordinary installation.
How to install them.
In most cases you use one on the wing, somewhere on the middle.
Then three somewhere inside the fuselage (fuse, fuz, etc)
Hook them up electrically to your receiver, extend your antenna on your transmitter (trannie) and turn on the transmitter. Then turn on your receiver.
On your trannie set the trims for the control sticks to center on each on of them except the throttle. That one should be all the way down.
The throttle stick should be all the way down and centered (spring loaded), and the right stick should be centered (spring loaded).
THe servos should now be all centered or at their neutral positions.
The servo arm on the wing can now be installed and should be centered as close as possible. sometimes, you can rotate 180 degrees to get a better result.
The servos for the elevator and the rudder are now at neutral position also and thus you can mount, the arms on there now. Mount them so that they are as centered as possible also.
Then connect the control push/pull rods.
