I've got the single motor version of this model and I also thought the stab looked a bit small for such a large wing.
Turns out that the stab is just fine in the air. It feels solid, but is very responsive to elevator commands.
The standard fuse has room to pack plenty of power into a single motor.
Not sure why you'd want/need two except to have something different -- and for the cool sound the two motors would make together.
