The problem I see here is the battery is WAAAAY to small in terms of C rating, these motors pull about 100+ amps in a 70MM fan and the battery you have (the 3000mah) is only good for about 60amps. 3000mah X 20C = 60amps continous and only 120amps burst and their burst rating is only for a quick burst of split seconds etc. You are trying to pull about twice the amps that your pack is able to do therefore you are puffing it and swelling it. These motors need a 125amp esc and a battery around something like a 4000 30C pack which is 4000mah X 30C = 120amps continous. SO that is your problem and that's why your pack is getting extremely hot. And espicially when you try to run even the smaller 2650 lipo, that pack is only good for 2650 X 20C = 53 amps continous and once again you are trying to pull about 100 amps thru a 53 amp battery, GO DO THE MATH 
Most EDF JETS with a high powered motor such as the JS1400, the ARC or the HOFFMAN wild Beast or HOFFMAN Beast need a battery pack of at least 30C or more and of at least a 3000mah size because once again 3000mah X 30C = 90amps continous.
