Just pulled an unassembled GWS PT-17 out of storage. Wondering what brushless motor to use. Doesn't need to be speed demon. Scale flight or a little bit better. Any suggestions appreciated.

Go with a "400 class" brushless around 900kv

This should be perfect for you. Use a GWS 9X5 prop and you will be very happy. I would recommend 1000mah lipo packs to keep things light. If you want a little better flight time, go with the 1300mah. (use 3 cell packs with at least 20C rating)

It will be scale flying at around 2/3 throttle and probably unlimited vertical performance at full throttle... without being "stupid fast"

Which motor did it have? The 350 or 400??

Its stock motor was brushed EPS400 with C gear if I recall it correctly. The said 400 class outrunner certainly works much better on it.
