Run it up in static testing doing shorter runs and checking for heat. When you get to the point where you cannot keep your finger on the area where the windings and bearing tube are you are pretty close to the safe limit.
Depending on what you want to do in flight, sometimes you can user time limited burst of full throttle and then back off a click to cool it down between bursts. But if you need continuous maximum throttle, test until you find the throttle setting that does not cook the motor. And keep an eye on the ESC and battery temperature too as you test. If you want to pursue speed on the 2730 motors there is a ton of info here on doing that. If you look at Truglodite's blog page there are links to a lot of the good info and spreadsheets with a lot of the details. It covers about all of the generations and colors of the blue/red/silver/etc. wonder motors. You can run a GWS 5043 prop no problem. Use a 18-20 amp esc and your golden.
