I'm about to start building Marie Felling, the rudder and skeg to start with.

They are both made from a softish alloy, will these wear away quickly?

I had an idea to super glue a steel washer to the bottom of the rudder and 1 to the skeg, filling them down to please the eye.

My main question is it a sound idea, am I worrying over nothing, or is there a better solution?

Yes, they may well wear if its a soft alloy.. and your idea is sound, though brass washers would be preferable over steel ones. If you 'tack' the washers to the rudder and skeg with CA, perhaps using epoxy to finish them off may be a better solution.

If you're uncomfortable with a soft alloy rudder; like I am, just trace the kit rudder out on some plastic or brass sheeting, cut out and file/sand to shape.
