Type of servo to pick

I am looking to save room on my boat, how well do the micro or mini servos work for the marine application?

It depends on the size of the rudder and the 'leverage' provided by the tiller arm.
You are in danger of stripping the gears if the servo isnt up to the job.

I wouldnt try to control a rudder with a micro servo if its bigger than say 2" square.
