OK first of all I'm confused as to the turn system how many turns does stock
have and what does it mean?

second I'm confused as to what ESC's can handle can speed controllers handle
higher turns or lower turns?

oh and if possible why for both.

27 turns .. the number of turns around a core that a pre-determined size of
wire is wrapped ..

Unlimited ESC's handle any turns of motor.

If you have an ESC that is, say, limited to 15 turns, it will handle
anything with 15 OR MORE turns. ie, don't run a 15 turn ESC on a motor with
14 turns. it will be OK on a 16 turn motor, and anything with a larger
number of turns than 15, not less.

limited ESC's are generally cheaper, made to withstand less heat and abuse
... Unlimited are generally used when you want to abuse (race) your motors ..

its one piece of wire wrapped 27 times the armature of the motor. The
armature is the bit that spins.

when a motor has fewer turns of wire round the motor.eg an 8 turn motor it
draws more current throught he speed controller. So the speed controller
needs to be better in order to cope with it.

If you buy a speed controller with a 10 turn limit, it can handle any motor
with 10 turns or more. An 8 Turn may work but its not recommended.

A stock motor means you are not be able to tune the timing, or some of them
can't even rebuild, and with a bushing end belt and case (no ball bearings).
In USA, stock motor usually runs at 27 turns, but in Japan and HK, Stock
motor runs in 23 turns.

Nowadays, most ESC can handle motors equal or more then 7 turns, but some of
the low end model still have the motor limit. Yet, most of the time, you'll
not use a motor less then 7 turns even in 1/12 on road or seden.... So some
of ESCs saying that they have no motor limit usually means they can handle
motor not less then 7 turns. Like the GM V12we. 2 years ago, it don't have
an motor limited, but now if you refer to the web site, it has a motor limit
at 7 turns.
