I'm in the process of builing a Sig King Kobra and am thinking about using separate servos for each aileron instead of the single servo driving both. My rationale is to be able to set differential with my radio. My first question is "Do you think it's worth it for this particular kit?"
My second question refers to some who have shortened the length of the ailerons. Is there a performance reason for this? Is it something I also should consider or just leave the full span strip ailerons as is?

YES Do it by all means if you have a good computer radio capable of running separate aileron servos.
That's an old design with smallish ailerons, I'd leave them long. Shortening the already short chord ailerons will make it sluggish.
Along with being able to dial in differential (which you'll use to make the plane do perfect axial rolls) you can use the flap/spoiler mixes for landing, and snap flaps in both directions for more lift when elevator is used.
Lots of possibilities.
Some may have shortened the ailerons if they possibly fluttered at high speeds, but if you use separate servos for each aileron, you can place them outboard so the surface is driven from it's center, not one end, which will help keep flutter from developing if that was ever an issue.

You can set differential via the position of the aileron horn relative to hinge line. If the horn is under the wing, the further forward of hinge line the servo link point is, the greater the differential.
