Is there a program that will make flying an R/C heli easier? (i.e., automatic trim)

Since this question is in the "Simulators" forum you could mean "Is there a program that will make *learning* to fly an R/C heli easier"?

If so then both Phoenix and Clearview (and maybe others?) allow the sim to *watch* some of the control inputs so that you can concentrate on learning to master another one.
e.g. The sim will automatically maintain height while you learn "ailerons" "elevator" and "rudder".

If you mean is there some way to assist live model flight? Then there's more than one way to skin this cat.
A computer Tx can be programmed to mix together inputs in the same way that "revo mix" adds tail power to stabilise pitch/throttle inputs.
A gyro can be set to maintain a fixed heading etc. etc.

Another approach may be to start with a heli that requires less control input because it's designed to be easy to fly, has its stability "designed in" and has less channels to worry about, i.e start with picooZ then move up to co-ax, fixed pitch and finally collective pitch (although the order of the last two may be debatable if you read the micro heli forum).
